Ingredients
  

  • 1 cup good mayonnaise
  • 1 cup scallions white and green parts, 6-7, chopped
  • 1 cup fresh basil leaves* chopped
  • 1/4 cup lemon juice freshly squeezed
  • 2 teaspoons chopped garlic
  • 2 teaspoons anchovy paste or 2 anchovy fillets
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 cup sour cream

Instructions
 

  • Place mayo, scallions, basil, lemon juice, garlic, anchovies, salt and pepper in blender and blend until smooth.
  • Add sour cream and process until just blended.

Notes

  • Basil can be substituted with other fresh herbs you have available.
  • Dressing can be used over salads or as a vegetable dip.
  • For a deconstructed version of a Cobb Salad, serve the dressing over whole leaf little gems with bacon bits and croutons crumbs.  YUM!
