Green Goddess Dressing

- Hand Blender (preferred)

Ingredients
- 1 cup good mayonnaise
- 1 cup scallions white and green parts, 6-7, chopped
- 1 cup fresh basil leaves* chopped
- 1/4 cup lemon juice freshly squeezed
- 2 teaspoons chopped garlic
- 2 teaspoons anchovy paste or 2 anchovy fillets
- 2 teaspoons kosher salt
- 1/2 teaspoon black pepper freshly ground
- 1 cup sour cream
Instructions
- Place mayo, scallions, basil, lemon juice, garlic, anchovies, salt and pepper in blender and blend until smooth.
- Add sour cream and process until just blended.
Notes
- Basil can be substituted with other fresh herbs you have available.
- Dressing can be used over salads or as a vegetable dip.
- For a deconstructed version of a Cobb Salad, serve the dressing over whole leaf little gems with bacon bits and croutons crumbs. YUM!
